STARTERS

Grilled poultry fillet,
marinated with orange flower, yoghurt-avocado dressing with argan oil and boulgour

Duet of duck foie gras,
one diced with smoked duck fillet, the other poached in a spicy wine, baguette toasts

Meli-Melo of salad,
seasonal vegetables sprinkled with lemon olive oil dressing

Creamy asparagus soup,
with a touch of Roquefort, soft boiled egg in a spicy crust, crunchy Mikado asparagus

MAINS

Golden trout caramelized with carrot juice,
green vegetables scented with passion fruit and “roquette” butter

Supreme of guinea fowl with morels,

lemon grass butter and spring vegetables

Calf’s sweetbreads stuffed with prawns,
smoked fish gravy and  garden vegetables

Simmental Chateaubriand roasted in casserole (for 2 persons),
Café de Paris sabayon, vegetables with bone marrow
